I have wonderful memories of cooking with my mom when I was little. We often rolled out biscuit dough and I would cut the circles out with drinking glasses. Its been a few years, and I admit I usually buy the refrigerator style dough. But homemade tastes SO much better and you know the ingredients are hand picked and fresh.
Now: onward to the best buttermilk biscuit recipe ever! Might be a slight exaggeration, but I definitely give them two big thumbs up! The recipe calls for only 4 ingredients, but they are important (the buttermilk gives them fabulous flavor) so don't get to creative with swapping out ingredients!
Buttermilk Skillet Biscuits
makes 6-8 biscuits

3 cups self-rising flour plus more for dusting
6 tablespoons cold butter, plus 3 tablespoons melted
1 3/4 cups cold buttermilk
1 tablespoon vegetable oil
Preheat the oven to 425 degrees F. Put a 8 to 10 inch cast-iron skillet in oven while oven preheats. 15 minutes before preparing the biscuit dough, put butter, pastry cutter, and mixing bowl in freezer. (tip: if you don't have room for the bowl in the freezer, stick it in the refrigerator!)
Add flour to the cold mixing bowl. Use a pastry cutter to work 6 tablespoons of butter into flour (making pea-sized balls of butter). Add buttermilk 1 cup at a time to dough and mix. Dough should be moist but workable (you can add a little extra flour if mixture is too sticky). Place dough on floured surface and roll out to 1" thick. Use a cup or biscuit cutter to cut out biscuits.
Carefully take out hot cast iron skillet from oven and add vegetable oil to skillet. Carefully add biscuit dough circles to hot skillet (they will sizzle a bit!), and brush with 3 tablespoons melted butter. Bake until brown, 14-15 minutes.
Your biscuits will taste amazing on their own, but even better with fresh whipped butter. It is super easy to make and uses some of my favorite ingredients (vanilla, butter, and cinnamon).
Whipped Honey Butter

2 sticks salted butter, room temperature
2 tablespoons honey
1/4 teaspoon cinnamon
1/4 teaspoon vanilla
Using butter churner or mixer with whisk attachment, mix butter, honey, cinnamon and vanilla together until well combined. Serve at room temperature.
