In my family the two days after Thanksgiving are all about relaxing, outdoor time (croquet games), and of course football watching! Turkey leftovers are wonderful, but eventually they run out and guests crave something different.
This skillet ham and cornbread recipe uses simple ingredients, is easy to make, and will impress your guests! The cornbread is a Southern classic made with buttermilk in a cast iron skillet. For them ham I transformed Smucker's Fruit & Honey Strawberry Jalapeño Fruit Spread into a glaze. The fruit spread has a fun, mild jalapeño kick to it and just the right amount of sweetness. You could serve this meal any time of day, but it would especially make a great casual lunch for family while watching football!

Skillet Buttermilk Cornbread with Skillet Glazed Strawberry Jalapeño Ham
Buttermilk Cornbread Ingredients
2 cups stone ground cornbread mix
1/2 cup (1 stick) melted salted butter + 1 tablespoon butter
1 cup buttermilk
1 egg
Buttermilk Cornbread Directions
Preheat oven at 375 degrees F. Coat interior of 8-10" cast iron skillet with 1 tablespoon butter. Place skillet in oven while oven preheats for 10 minutes. Melt 1/2 cup butter, whisk in egg, and add buttermilk. Stir in cornbread mix. Mixture will be coarse. Carefully pour into preheated skillet, mixture may sizzle a bit. Bake for 25-30 minutes.
Glazed Strawberry Jalapeño Ham Ingredients
6 precooked ham slices
3 tablespoons Smucker's Fruit & Honey Strawberry Jalapeño Fruit Spread
Glazed Strawberry Jalapeño Ham Directions
Microwave 3 tablespoons Smucker's Fruit & Honey Strawberry Jalapeño Fruit Spread in a small microwave safe bowl for 30 seconds. This will create a nice glaze for the ham. Heat a cast iron skillet or frying pan to medium heat. Drizzle warm glaze onto ham slice, and fry for 2-3 minutes per side. Serve warm with a slice or two of cornbread.
The secret to crispy cornbread: preheat the skillet (seasoned with butter) for 10 minutes before adding the batter. It will fry the bottom and give the base of the cornbread a beautiful golden color!
While conrbread is baking in the oven, warm 3 tablespoons of Smucker's Fruit & Honey Strawberry Jalapeño Fruit Spread for 30 seconds. This will be the glaze for your ham.
Fry each glazed ham slice 2-3 minutes per side on medium heat. The Smucker's Fruit & Honey Strawberry Jalapeño Fruit Spread glaze gives the ham beautiful color and flavor.
