A few things you should know about me: most of my recipes involve sweets and baking. And they are almost always easy. Just a few more steps than the boxed blueberry muffins, the result is fluffy and sweet and wholesome. And the perfect spring treat, morning noon or night!
Simple Homemade Blueberry Muffins
(modified from allrecipes.com)
1/2 cup salted butter, softened
3/4 cup white sugar
2 eggs
1 1/2 teaspoon vanilla
2 cups all purpose flour
2 teaspoons baking powder
1/2 cup milk (I used 2%)
1 1/2 cup blueberries
topping::
2 tablespoons all purpose flour
2 tablespoons sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter, chilled
Preheat oven to 375 degrees F. In a large bowl cream together butter and sugar until fluffy. Stir in eggs one at a time, beating well, then stir in the vanilla. In a separate bowl stir together 2 cups flour and baking powder. Stir the flour mixture into egg mixture alternately with milk. Gently fold in blueberries. Spoon batter into muffin cups.
in small bowl mix together 2 tablespoons flour, sugar, and cinnamon. Cut in butter until mixture looks crumbly. Sprinkle over unbaked muffins. Bake in oven 25-30 minutes.
I adore recipes that use items I already have on hand. I almost alway have eggs, butter, vanilla and flour. I only needed to purchase the blueberries. And it is easy to substitute: I used plain old sugar instead of brown sugar for the topping. I used salted butter in the recipe too. If you opt for unsalted, just add a pinch of salt to the recipe.
The result was delicious! I cooked mine in cupcake liners, they would be fun to use for a wedding or baby shower. But they can also be cooked in muffin tins. Just remember to grease the pan.
